Healthy Halloween Recipes

Halloween is a time of get-togethers and partying, so you are generally expected to eat a lot. And also people who come to your parties are expected to eat a lot too. Healthy Halloween pumpkin bread

Some of the Healthy Halloween Recipes Ingredients:

  • 1.5 cups of flour
  • 1-1/4 tsp baking powder
  • 1 tsp cinnamon powder
  • 1 cup sugar (brown)
  • 1/2 tsp nutmeg powder
  • 1 cup pumpkin puree
  • 1 egg
  • 1/2 tsp cloves
  • 1/2 cup buttermilk
  • 1/4 cup chocolate chips
  • 1 spoon oil
  • 1 tsp salt

Instructions:

  • Preheat the oven on 350 degrees
  • Prepare the pan by spraying a non stick spray on it and leave it to settle down
  • Mix all the dry ingredients, i.e. cinnamon, salt, baking powder and nutmeg in a bowl
  • Mix the pumpkin puree, egg, sugar and butter milk in a bowl. Make sure the mixture has no lumps in it
  • Mix the mixture of the dry ingredients in the wet one and stir well. Do not over beat the mixture as this will cause the bread to harden
  • Add chocolate chips
  • Pour this complete mix in the greased pan
  • Bake for 1 hour
  • Serve Hot

Carrot Sauté with ginger

Ingredients:

  • 2 teaspoons vegetable oil
  • 2 teaspoons fresh ginger minced
  • 3 bowls of carrots grated
  • 1/2 cup orange juice
  • Fresh ground pepper
  • Salt
Instructions:
  • Heat oil in a non stick pan
  • Sauté ginger in the oil for about a minute
  • Immediately add carrots in the pan and sauté them for about 3 min till they totally soften
  • Add salt and orange juice. Mix all the ingredients well and simmer on low flame
  • As the mixture will be watery, allow it to simmer for about 3 minutes so that most of the water is lost
  • Serve the dish with a pepper seasoning
  • Serve it hot.

Healthy Halloween beans and peas

Ingredients:

  • 3 bowls of beans
  • 1 cup of peas
  • 1 spoon olive oil
  • 2 green chilies
  • 1 spoon mustard gravy or ½ spoon mustard seeds
  • Salt
Instructions:
  • Heat oil in a medium sized pan
  • Add the mustard gravy or seeds in it; allow it to simmer for a minute
  • When the seeds or the gravy start to pop, add peas, beans and chilies
  • Add salt
  • Sauté all the veggies for a minute and add one cup water in it
  • Cover the pan and allow all of it to simmer on low flame for about 3 minutes
  • Allow it to simmer till the time there is water and the gravy does not become thick
  • Serve hot

Sesame Croutons with Carrot Soup

Ingredients: for the Carrot Soup

  • 2 tablespoons of olive oil
  • 1 garlic clove; crushed
  • Fresh ground black pepper
  • 1-1/2 pints of vegetable stock
  • 1 pound of finely chopped carrots
  • 2 teaspoon of sage
  • 1 large cup of chopped potato
  • 3 ounces of chopped cashews
  • 1 finely chopped onion
  • Salt

Ingredients for Sesame Croutons

  • 2 teaspoons poppy seeds
  • 4 thick slices whole grain bread
  • 2 beaten egg whites
  • 2 teaspoons sesame seeds
  • Canola or vegetable oil for frying

Instructions: -

For Carrot soup

  • Heat the oil and sauté the onions
  • After 2 minutes, add sage, yeast extract, garlic, potato and carrots and mix well
  • After the carrot has softened, add the vegetable stock and let it simmer for about 25 minutes
  • Add cashew nuts and allow it to get lukewarm
  • Blend the mixture and make it into a form of a puree
  • Heat it again, and serve hot
For Sesame Croutons:
  • Take the whole grain bread and cut it into long small pieces
  • Mix the poppy and the sesame seeds well
  • Dip the pieces of the bread in the beaten egg whites
  • Coat the bread with the mixture of seeds
  • Sauté the bread in oil and keep turning them very frequently
  • Remove them after they turn golden brown
  • Serve hot with the carrot soup
